Ingredients
-
2 cups fresh Lion’s Mane mushrooms (harvested from your Zugzology grow kit)
-
12 oz pasta (fettuccine or linguine works best)
-
2 tablespoons olive oil
-
3 cloves garlic, minced
-
1 small onion, finely chopped
-
1 cup heavy cream
-
1/2 cup grated Parmesan cheese
-
1/4 cup vegetable or chicken broth
-
1 tablespoon fresh thyme leaves
-
Salt and pepper to taste
-
Fresh parsley, chopped (for garnish)
Directions
Step 1: Prepare Your Lion’s Mane Mushrooms
If you’re using mushrooms from your Zugzology grow kit, gently harvest them when they reach the ideal size (about 3-5 inches in diameter). Clean the mushrooms with a damp cloth and slice them into bite-sized pieces.
Step 2: Cook the Pasta
Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
Step 3: Sauté the Mushrooms
Heat olive oil in a large skillet over medium heat. Add the Lion’s Mane mushrooms and cook for 5-7 minutes until they’re golden brown and slightly crispy. Remove the mushrooms from the skillet and set aside.
Step 4: Create the Creamy Sauce
In the same skillet, add the minced garlic and chopped onion. Sauté for 2-3 minutes until fragrant. Pour in the heavy cream, vegetable broth, and thyme leaves. Stir in the grated Parmesan cheese and let the sauce simmer for 5 minutes until it thickens.
Step 5: Combine and Serve
Add the cooked pasta and sautéed Lion’s Mane mushrooms to the skillet. Toss everything together, adding a splash of reserved pasta water if needed to loosen the sauce. Season with salt and pepper to taste. Garnish with fresh parsley and an extra sprinkle of Parmesan cheese.
